Burrata Cheese Pasta
Linguine tossed with burst cherry tomatoes, fresh basil, and creamy burrata — simple, beautiful, delicious.
Ingredients
- 1/4 C olive oil
- 6 garlic cloves, minced
- 1/2 t dried basil
- 1/4 t crushed red pepper flakes
- 3 C cherry tomatoes
- Salt and pepper to taste
- 1/2 lb pasta (linguine works great)
- 1/4 C chopped fresh basil
- 8 oz burrata cheese
- Parmesan cheese, for topping
Instructions
- Heat the olive oil in a large skillet over medium-low heat. Add the garlic, dried basil, and red pepper flakes; cook for 1 minute.
- Add the tomatoes with a big pinch of salt and pepper and toss them in the oil. Let the tomatoes cook for 10–15 minutes, until they begin to burst. If they aren't bursting, increase the heat.
- Bring a pot of salted water to a boil and cook the pasta.
- Once the pasta is done, drain it and add it directly to the skillet. Toss a few times so all the noodles are coated.
- Turn off the heat and toss in the fresh basil. Add the burrata cheese on top.
