One Pot Creamy Cajun Chicken Pasta

Spicy Cajun chicken and penne simmered in one pot with fire-roasted tomatoes and cream cheese.

Cajun Seasoning

Instructions

  1. Combine all Cajun seasoning ingredients in a small bowl.
  2. Cut the chicken into bite-size pieces, add to a bowl, and coat with the Cajun seasoning.
  3. Heat olive oil and butter in a large deep skillet over medium-high heat until hot and foamy.
  4. Add the seasoned chicken and cook for a couple of minutes to get color on the outside. The chicken does not need to be cooked through yet.
  5. Add the diced yellow onion and sauté for about 2 minutes.
  6. Add the pasta, diced tomatoes, and chicken broth. Stir to combine, then cover and bring to a boil.
  7. Once boiling, reduce heat to medium-low and simmer, stirring every couple of minutes, until the pasta is tender and the liquid is thick and saucy.
  8. Add the cream cheese in chunks and stir until melted into the sauce.
  9. Top with sliced green onions.
  10. Best part — Serve and enjoy!
