One Pot Creamy Cajun Chicken Pasta
Spicy Cajun chicken and penne simmered in one pot with fire-roasted tomatoes and cream cheese.
Cajun Seasoning
- 2 t smoked paprika
- 1 t oregano
- 1 t thyme
- 1/2 t garlic powder
- 1/2 t onion powder
- 1/4 t cayenne pepper
- 1/4 t black pepper
- 1/4 t salt
Chicken Pasta
- 1 T olive oil
- 1 T butter
- 1 lb chicken breast, cut into bite-size pieces
- 1 yellow onion, diced
- 1/2 lb penne pasta
- 15 oz fire roasted or sun dried tomatoes, diced
- 2 C chicken broth
- 2 oz cream cheese
- 3 green onions, chopped
Instructions
- Combine all Cajun seasoning ingredients in a small bowl.
- Cut the chicken into bite-size pieces, add to a bowl, and coat with the Cajun seasoning.
- Heat olive oil and butter in a large deep skillet over medium-high heat until hot and foamy.
- Add the seasoned chicken and cook for a couple of minutes to get color on the outside. The chicken does not need to be cooked through yet.
- Add the diced yellow onion and sauté for about 2 minutes.
- Add the pasta, diced tomatoes, and chicken broth. Stir to combine, then cover and bring to a boil.
- Once boiling, reduce heat to medium-low and simmer, stirring every couple of minutes, until the pasta is tender and the liquid is thick and saucy.
- Add the cream cheese in chunks and stir until melted into the sauce.
- Top with sliced green onions.
