Chicken Bruschetta Pasta
Pasta and chicken tossed with a fresh bruschetta of cherry tomatoes, basil, balsamic vinegar, and Parmesan.
Ingredients
- 1 lb chicken, cut into bite-sized pieces
- 1 lb pasta
- 2 C cherry tomatoes, halved
- ¼ C fresh basil, chopped
- 2 cloves garlic, minced
- ¼ C balsamic vinegar
- ¼ C olive oil
- ½ C grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta until al dente. Drain and set aside.
- Cook the diced chicken over medium heat until fully cooked. Season with salt and pepper.
- In a bowl, combine cherry tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well.
- Add the cooked pasta, cooked chicken, and bruschetta mixture to the skillet (off heat). Toss everything together until well combined.
- Sprinkle grated Parmesan on top and serve hot. Best part — enjoy!
