Chipotle Chicken Alfredo
Smoky chipotle peppers blended into a creamy Greek yogurt Parmesan sauce, tossed with pasta and seasoned chicken.
Ingredients
- 1½ C Greek yogurt
- ½ C grated Parmesan cheese
- 2 chipotle peppers in adobo sauce
- ½ C milk
- 2 garlic cloves
- 24 oz chicken breast
- 2 t garlic salt
- 1 T smoked paprika
- 1½ t onion powder
- 8 oz pasta
- Fresh chives
- Red pepper flakes
Instructions
- In a blender add the Greek yogurt, Parmesan, chipotle peppers, milk, and garlic. Blend until smooth and creamy.
- Cut the chicken into bite-size pieces and season with garlic salt, smoked paprika, and onion powder.
- Boil water and cook the pasta according to package directions.
- Cook the chicken until done to your liking.
- Drain the pasta, add the blended sauce, and mix until fully coated.
- Add the chicken to the pasta and toss to combine.
- Plate and top with fresh chives and red pepper flakes.
