Coconut Lime Chicken

Chicken marinated in coconut milk, lime, ginger, and garlic, then simmered in its own silky sauce over rice.

  1. In a bowl, combine coconut milk, lime zest, lime juice, garlic, ginger, soy sauce, honey, salt, and pepper.
  2. Cut chicken into bite-sized pieces, add to the marinade, cover, and refrigerate for 30 minutes.
  3. Heat a skillet over medium-high heat. Cook the chicken from the marinade (reserve the marinade) until cooked through.
  4. Pour the marinade into the skillet and bring to a simmer. Cook a few minutes until the sauce thickens slightly. If it doesn't thicken, make a cornstarch slurry (1 t water + 1 t cornstarch) and stir it in.
  5. Serve over cooked rice, spoon the sauce on top, and garnish with fresh cilantro. Best part — enjoy!
