Coconut Lime Chicken
Chicken marinated in coconut milk, lime, ginger, and garlic, then simmered in its own silky sauce over rice.
Ingredients
- 4 chicken breasts
- 1 can coconut milk
- Zest and juice of 2 limes
- 3 cloves garlic, minced
- 1 t ginger, grated
- 1 T soy sauce
- 1 T honey
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice, for serving
Instructions
- In a bowl, combine coconut milk, lime zest, lime juice, garlic, ginger, soy sauce, honey, salt, and pepper.
- Cut chicken into bite-sized pieces, add to the marinade, cover, and refrigerate for 30 minutes.
- Heat a skillet over medium-high heat. Cook the chicken from the marinade (reserve the marinade) until cooked through.
- Pour the marinade into the skillet and bring to a simmer. Cook a few minutes until the sauce thickens slightly. If it doesn't thicken, make a cornstarch slurry (1 t water + 1 t cornstarch) and stir it in.
- Serve over cooked rice, spoon the sauce on top, and garnish with fresh cilantro. Best part — enjoy!
