One Pan Spicy Garlic Lime Chicken Pasta
Spicy chicken, garlic, cherry tomatoes, and pasta cooked together in one pan with a bright squeeze of lime and Parmesan.
Ingredients
- 1 lb chicken breast
- 8 oz pasta
- 3 C chicken broth
- 2 T olive oil
- 4 cloves garlic, minced
- 1 t red pepper flakes
- Juice of 1 lime
- 1 C cherry tomatoes, halved
- 1/2 C grated Parmesan cheese
- Salt and pepper to taste
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- In a large pan, heat olive oil over medium heat. Add chicken pieces and season with salt, pepper, and red pepper flakes. Cook until cooked through.
- Add minced garlic and cook until fragrant.
- Pour in chicken broth, lime juice, and uncooked pasta. Bring to a boil, then reduce to a simmer. Cover and cook, stirring occasionally, until pasta is al dente.
- Stir in cherry tomatoes and cook for an additional 2–3 minutes.
- Remove from heat, stir in Parmesan cheese until combined.
- Add toppings if you want.
